〜の (the one): the one (stands in for a noun)

N5 · 04 Adjectives and comparing

After an adjective, a noun or a clause, の stands in for a noun that is already known: "the one that …".

赤いの = the red one, 私の = mine, 昨日買ったの = the one I bought yesterday. Possessive の links two nouns (私の本); nominalizing の turns a clause into a noun (泳ぐのが好き). This one replaces the noun itself.

Examples

I want the red one.

This is mine.

Do you have a new one?
